VFIO: use ACCESS_ONCE() to guard access to dev->driver

Comments from dev_driver_string(),
/* dev->driver can change to NULL underneath us because of unbinding,
 * so be careful about accessing it.
 */

So use ACCESS_ONCE() to guard access to dev->driver field.
